BASIC CHICKEN 
3 tbsp. olive oil
3 cloves garlic or more to taste
1 med. onion
6 boneless chicken breasts
2 cans diced tomatoes
1/3 c. fresh basil, chopped
1 green pepper, sliced lengthwise

Chop onion and garlic. Saute in olive oil. Remove garlic and onion. Brown chicken breasts in remaining oil. Add more oil, if necessary. Add diced tomatoes, basil and green pepper. Return garlic and onion to pan and continue to cook until sauce begins to thicken and chicken is cooked. Serve over noodles with fresh grated Parmesan cheese.
