GARDEN RICE 
1 16-oz. can mixed vegetables
1 8-oz. can sliced mushrooms
1 can beef consomme
6 oz. water
2 c. uncooked rice
2 tsp. salt
4 tbsp. butter
2 tbsp. shredded Parmesan cheese

Drain the mixed vegetables to remove all the liquid.

In a non-stick casserole, mix the consomme with the water, salt, butter, and mushrooms. Bring to a boil. Add the uncooked rice. Leave on high, uncovered, until it dries. Mix just one time with a fork. Cover and cook on low for 20 minutes.
