ROAST PORK 
1 (3 lb.) boneless pork loin roast, tied
1/2 tsp. salt (divide in two parts)
3/4 c. firmly packed dark brown sugar
1/2 c. apple brandy
1/4 tsp. grated lemon rind
1 tbsp. fresh lemon juice
1 tsp. cinnamon
1/8 tsp. nutmeg
3 apples, cored and cut into 8 wedges

Preheat oven to 325 degrees. Place pork fat side up in shallow roasting pan. Sprinkle with 1/4 teaspoon salt. Insert meat thermometer into roast. Roast 45 minutes.

In medium bowl, stir together brown sugar, apple brandy, apple juice, lemon rind and juice, cinnamon, nutmeg and remaining 1/4 salt. Pour off fat from roasting pan. Pour sauce mixture into pan and roast 30 minutes longer, brushing occasionally with sauce. Add apples; bake 15 minutes longer or until internal temperature of pork is 170 degrees. Remove roast from pan; let stand 5 minutes before carving. Serve with apples and sauce.
