SWEET POTATO PUDDING 
6-8 med. sweet potatoes
3 c. sugar
4 eggs
1/2 c. cornmeal
1 tsp. salt
3/4 tsp. baking powder
3 1/4 c. milk (sweet)
3 sticks butter (melted)

Grate potatoes, add sugar, eggs and stir well. Sift meal, salt, baking powder. Stir into potatoes, along with milk. Add butter.

Pour into a well greased 9x12 inch baking dish. Bake at 350 degrees for 1 hour. Stir after crust forms on top. Bake another 30 minutes or until another crust forms. This makes 10-12 servings.
