CHICKEN AND DUMPLINGS 
1 hen
1 qt. water
1 stick butter
1 1/2 tsp. salt
Salt and pepper to taste

Place hen, water, butter and salt in pot and cover. Bring to boil on high heat, then cook on medium or low heat until tender, adding more water if needed. Salt and pepper to taste. Pull chicken from bone.

DUMPLINGS:

4 c. plain flour
1 tsp. salt
1 egg
1 c. hot chicken stock

Mix flour and salt, stir in egg and add hot stock. Roll out on floured board and cut into 2 to 3 inch strips. Drop strips into boiling stock. Cook 10 minutes at medium heat, then add chicken to dumplings and serve. Yields 6 to 8 servings.
