KARITHOPITA 
12 eggs, separated
2 c. sugar
1 1/2 c. Zwieback, finely ground
3 c. walnuts or pecans, chopped
1 tsp. baking powder
1 jigger whiskey
1 tsp. vanilla
1 tsp. almond extract

Beat egg yolks with sugar until creamy. Add Zwieback crumbs, nuts, baking powder and flavorings. Mix well. Fold in stiffly beaten egg whites. Pour into greased 11 x 16 inch pan. Bake at 350 degrees for 40 minutes. Cool. Cut into diamond shapes.

Meanwhile, prepare syrup.

LIGHT SYRUP:

3 c. sugar
2 c. water
Juice of 1/2 lemon

Boil all ingredients for 15 minutes. Pour this light syrup over cake and let it stand before serving.
