ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
2 1/2 c. flour
2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 tbsp. cinnamon
1 c. chopped nuts
1 c. chopped dates or raisins
1 tsp. vanilla

Beat eggs, add sugar, oil, vanilla and blend. Add zucchini. Sift dry ingredients and blend with creamed mixture. Fold in nuts and fruits. Bake in 2 greased and floured 9x5 inch loaf pans at 350 degrees for 1 hour.

During holidays, I use candied fruit. This recipe also makes tiny loaf pans.
