SALMON WITH CUCUMBER PINEAPPLE
SAUCE
 
2 salmon fillets (no bone)
1/4 cup water
juice from 1/2 lemon
lemon pepper seasoning (Lawry's)
freshly ground pepper

CUCUMBER PINEAPPLE SAUCE:

1 large cucumber, cut into small cubes
1 green pepper, diced
1 (8 oz.) can crushed pineapple with juice

First, cut the meat away from the skin. Wash all of it off. On a cutting board, slice into bite size cubes.

In a medium glass bowl, fill it up with 1/4 cup of water. Squeeze in lemon juice from half a lemon. Stir the water and lemon juice together. Pour in your salmon cubes and toss together. Season, to taste.

On the same cutting board (washed off), cut your cucumber into small cubes. Dice your green pepper into minuscule pieces. Toss with your crushed pineapple. Stir thoroughly.

Over a small pan, simmer the pineapple and cucumber mixture on low heat for 5 to 8 minutes. When finished, place in the refrigerator until the salmon is finished.

With your salmon, place on electric grill or griddle until slightly browned.

To serve, place on a few pieces of salmon on a dish and put some cucumber pineapple sauce on the top.
