4 c. sugar 1 c. light corn syrup Dash of salt 3 egg whites 1 tsp. vanilla (or black walnut flavoring) 1 c. pecans Combine sugar, corn syrup, 3/4 cup water and salt in 4-quart glass casserole. Microwave on HIGH for 19 minutes, stirring every 5 minutes. Use a candy thermometer to 260 degrees. Beat egg whites until real stiff and pour mixture over egg whites. Beat on HIGH until mixture is thick and loses its gloss. Fold in vanilla and pecans. Drop by spoonfuls onto wax paper. |
