RAISED CORNMEAL PANCAKES 
1 cup cornmeal
hot water (enough to cover)
2 cups milk
2 tablespoons friendship starter or 1/2 pkg dry yeast
1 tablespoon brown sugar
2 eggs, beaten
1/4 - 1/2 teaspoon salt (to your taste)
1/2 teaspoon baking soda

Pour hot water over a cup of cornmeal, but not more than it will absorb. This is done in the evening. When cool, add two cups of milk and two tablespoons of liquid yeast, or half of a package of active dry yeast of compressed yeast dissolved, a tablespoon of brown sugar and let it rise overnight.

In the morning add two beaten eggs, salt, half a teaspoon of baking soda dissolved in hot water, mix and bake on a hot griddle brushed with melted butter until cooked almost to the center, then flip and cook other side for another minute or two until done.
