MEXICAN CASSEROLE 
1 1/2 lbs. ground beef
1 pkg. chili or taco mix
1 c. grated cheese
1/2 c. milk
1 can Campbell's baked beans
1 c. pancake mix
1 egg
1 can tomato soup

Brown and drain ground beef. Add can of beans and liquid, chili or taco mix (keeping aside 1 teaspoon) and tomato soup. Simmer 5-10 minutes.

In another dish mix a cup (plus a little more) pancake mix with grated cheese, egg, milk and reserved chili or taco mix, stirring well to make a batter. Place meat mixture in casserole dish and spread batter mix on top of meat. Sprinkle on some chopped parsley. Bake at 350 degrees for 20 minutes.
