CRABMEAT AU GRATIN 
2 tbsp. butter
1 sm. onion, chopped
1/2 c. celery, chopped
2 tbsp. flour
1 c. milk
Salt and pepper to taste
1 lb. crabmeat (or imitation crab)
1 c. sharp Cheddar cheese, shredded

Saute butter, onion, and celery in a skillet, stirring with a wire whisk. Stir in flour, salt, and pepper. Add milk and continue stirring until mixture thickens slightly. Add the crab. Stir in 1/2 cup of the cheese and mix well.

Pour mixture into a medium-sized greased casserole dish. Top with the remaining cheese. Bake in a 350 degree oven for 30 minutes or until cheese melts and it is slightly browned.
