SWEET POTATO MUFFINS 
2/3 c. mashed sweet potatoes
4 tsp. butter, softened
1/2 c. sugar
1 egg, slightly beaten
3/4 c. flour
4 tbsp. chopped nuts
4 tbsp. raisins, chopped

Combine potatoes, butter, sugar and egg. Stir in flour, nuts and raisins. Pour batter into greased muffin pans. Sprinkle a mixture of sugar and cinnamon on top before baking. Bake at 400 degrees for 25 minutes.
