RHUBARB BREAD | |
1 1/2 c. brown sugar or 3/4 c. honey 1/2 c. oil 1 egg 1 tbsp. baking soda 1 c. buttermilk 2 1/2 c. whole wheat flour 1 tsp. salt 1 1/2 c. rhubarb, diced TOPPING: 1/2 c. brown sugar 1 tsp. cinnamon 1 1/2 tbsp. butter Mix brown sugar or honey and oil, add egg, beat well. Dissolve soda in buttermilk. Set aside. Sift flour and salt together. Add to sugar-oil mixture alternately with buttermilk. Stir in rhubarb, vanilla and nut meats. Pour into 2 greased bread pans. Combine topping ingredients and sprinkle over batter. Bake in 325 degree oven for 1 hour. Remove from pans and cool on wire racks. |
