POOR MAN'S ALMOND ROCA | |
3 oz. almonds or walnuts, coarsely chopped, about 3/4 c. 8 tbsp. butter 3/4 c. brown sugar 6 oz. semi-sweet chocolate, coarsely chopped Sprinkle the chopped nuts over the bottom of a well-greased 9" pie pan. In a 2 quart saucepan, melt the butter. Add the brown sugar and stir constantly for 7 minutes. Pour the mixture over the nuts in the pan and immediately top with the chopped chocolate. Let the chocolate melt and then spread it over the sugar-butter mixture with the flat side of a table knife. Place the pan in the freezer for about 20 minutes so it will set. Then cut the candy into squares. Store it in the refrigerator. Makes about 3/4 pound. |
