RICE PUDDING 
2 qt. plus 1 pt. milk
11 heaping tbsp. rice
1 1/2 c. sugar (may use less, if desired)
1 1/2 tbsp. vanilla

Stir together in large bowl. Heat oven to 400 degrees. Cook about 3/4 hour or 1 hour until brown skin covers pudding, stir skin under. Bake another 1/2 hour or so until second skin appears. Stir this under, continue baking until third skin covers pudding, approximately 3/4 hour.

Tests to see if rice is soft. Leave skin on, remove from oven. Delicious served warm or cold. Refrigerate, keeps for several days.
