CRAWFISH ETOUFFEE 
1 lb. peeled crawfish
Crawfish fat (optional)
1 stick butter
1 sm. onion, chopped
1 sm. bell pepper, chopped
1 clove garlic, chopped
Salt & pepper to taste
Favorite seasoning (optional)
4 Ritz crackers, crushed

Melt butter and add onions, bell pepper, garlic and crawfish fat (if available). Saute until onions are clear. Add crawfish and just enough water to rinse bags (about 1/3 cup). Add salt, pepper and other seasoning desired. Cook on low heat until crawfish is done, approximately 10 minutes. Remove from heat and add crackers. Let stand for 10 minutes before serving.
