CEREAL SNAPS | |
1/2 c. shortening 1/2 c. sugar 1/2 c. brown sugar 1 egg 1/2 tsp. vanilla 1 1/4 c. all purpose flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2 c. Rice Krispies cereal 1 1/3 c. coconut (3 1/2 oz. can) Cream shortening and sugar; add eggs and vanilla. Cream until light and fluffy. Sift together flour, baking powder, soda, and salt. Stir into creamed mixture. Stir in 2 cups rice cereal and coconut. Shape in 3/4 inch balls. Place about 2 1/2 inches apart on ungreased baking sheet. Bake at 350 degrees for about 10 minutes or until lightly browned. Cool slightly. Remove from pan. |
