1 c. Bisquick
4 beaten eggs
1/2 c. chopped onions
1/2 c. chopped green pepper
1/2 c. oil
3 c. cubed zucchini
1/2 c. Parmesan cheese

Peel, seed and cube the zucchini. Beat eggs, mix oil with them. Mix all ingredients. Grease casserole. Pour all ingredients, except cheese, in casserole. Sprinkle cheese on top. Bake at 350 degrees for 25 to 30 minutes.
