ONE POT JOLLOF RICE 
1/2 lb. diced meat
1/2 lb. diced chicken
1/2 pkg. frozen mixed vegetables (thaw)
2 chicken bouillon cubes
2 tbsp. olive oil (to stir fry)
2 tbsp. tomato paste
1 tsp. salt (season meat & chicken)
2 1/2 c. long grain rice

Steam seasoned meat until tender in a medium saucepan. Pour oil into pan. Add chicken when meat is done. Add bouillon cubes and tomato paste after 6-7 minutes. Stir fry another 6 minutes on low heat.
