POT ROAST WITH RICE 
4-4 1/2 lb. lean chuck roast
1/4 tsp. pepper
3 tsp. salt
1 c. uncooked rice
1 can consomme

Brown meat on both sides. Season with 2 teaspoons salt and pepper. Line a 9 x 12 inch baking pan, with foil, allowing to fold over roast and seal. Place meat in pan along with drippings, seal ends and sides of foil. Roast in slow oven 250 degrees for 2 1/2 to 3 hours. Open foil - place rice in broth, season with salt. If more juice is needed use consomme, hot water or bouillon. Reseal, return to oven for 1 hour or until rice is fluffy and tender. Serves 8.
