MEATBALL STEW | |
2 c. corn flakes cereal, slightly crushed 1 egg 1 c. water in which 2 beef bouillon cubes have been dissolved 1/2 tsp. salt Dash pepper 1 lb. hamburg 2 cans condensed tomato soup 1/2 c. water 3-4 sliced carrots 1 lg. onion, sliced, separated into rings 6 med. potatoes, peeled & cubed Measure corn flakes into large mixing bowl, crush slightly. Stir in egg, 1/4 cup beef broth, salt and pepper. Beat well. Add ground beef, mixing only until combined. Shape mixture into 18 meatballs. Brown meatballs in 6 quart Dutch oven over medium heat. Pour off any excess fat. Mix together remaining beef broth, tomato soup and water and pour over meatballs. Add carrots, onions and potatoes. Cover and cook over low to medium heat about 25 minutes or until meatballs are thoroughly cooked. |
