PORK TENDERLOIN WITH ROSEMARY &
THYME
 
2 (1/2 lb.) pork tenderloins
Vegetable cooking spray
2 tbsp. Dijon mustard
1 tbsp. honey
1 tsp. chopped fresh rosemary
1/2 tsp. chopped fresh thyme
1/4 tsp. pepper

Trim all fat from tenderloins. Place on a rack coated with cooking spray. Place rack in a shallow roasting pan. Combine Dijon mustard and next 4 ingredients in a small bowl; brush over tenderloins. Insert a meat thermometer into thickest part of tenderloin. Bake at 350 degrees for 50 minutes or until thermometer registers 160 degrees, basting frequently with mustard mixture. Yield: 4 servings.
