MAY'S SECULAR APRICOT NECTAR
CAKE
 
1 box yellow cake mix
4 eggs, separated
3/4 c. apricot nectar
1/2 c. oil
1/4 c. lemon juice
Pinch of salt

GLAZE:

1 c. confectioners' sugar
2 tbsp. lemon juice

Separate eggs. Beat whites until stiff. Set aside. Beat yolks and add other ingredients. Beat until smooth. Fold in egg whites. Pour into greased tube pan. Bake at 325 degrees for 55 minutes. Cool for 5 minutes. Punch holes in cake and pour on glaze. Remove from pan when cooled thoroughly.
