CHESS PIE 
1 c. sugar
6 eggs
5 tbsp. butter, melted and cooled
1 (9 inch) pie shell, unbaked
3 tbsp. cornstarch
2/3 c. lemon juice
3 tsp. grated lemon rind

Heat oven to 325 degrees. In a large bowl, combine sugar, cornstarch, add eggs one at a time, beating well after each addition. Blend in lemon juice and butter, stir in lemon rind. Pour mixture into unbaked pie shell. Bake about 50 minutes. Test doneness by inserted knife into pie.
