FRIETA-FRIED SPINACH 
Cook frozen spinach until tender; drain. Mix 2 eggs with spinach; beat well. Add 1/3 cup Parmesan cheese. You may add oregano, rosemary and marjoram if desired; mix well.

Chop garlic and brown lightly in olive oil over slow heat. Next, pour ingredients in frying pan and brown over medium-low heat about 8 minutes on each side.
