FRIED EGGPLANT 
Dip strips or slices of eggplant in flour, then in beaten egg, then cracker crumbs. Saute in small amount of hot fat 5 to 10 minutes, or until tender and golden brown. Or French fry in hot fat (375 degrees) for 2 to 4 minutes on each side. Season with salt and pepper. Sprinkle with Parmesan cheese just before serving.
