FAVORITE BUTTERMILK PANCAKES 
2 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3 tbsp. sugar
3 eggs
2 c. buttermilk
1/2 c. butter, melted

In large mixing bowl, stir together flour, baking soda, baking powder, salt and sugar. In another bowl, beat the eggs about 1 minute on high speed until very light and fluffy. Pour eggs over flour mixture. Pour in buttermilk. Add butter. Fold together entire mixture until flour is just moistened. Bake pancakes on greased, hot griddle using about 1/4 cup of the mixture to make a 4 to 5 inch diameter pancake. Serve immediately with butter and your favorite syrup or topping.
