TRIPLE GRILLED CHICKEN SANDWICH 
1 large chicken breast
4 slices white bread
1 fresh jalepeno pepper
2 slices Colby Jack Cheese
1/2 stick butter
2 tablespoons sweet BBQ sauce
salt
pepper
garlic

This is a 4 step recipe.

Preparation:

Finely mince garlic. Julienne the jalapeno with after removing seeds. Fillet the chicken breast in half to thin it out and season with salt and pepper to taste.

Step 1:

Assemble 2 slices of bread with slice of cheese, minced garlic and julienned jalapeno slices. Repeat for the other 2 slices of bread. In a large skillet, melt 1/4 stick of butter and fry the bread/cheese sandwiches. Use another 1/4 stick of butter as you flip to grill the other side. This should completely saturate the bread and allow you to compress the grilled cheese sandwich very thinly.

Step 2:

Grill the chicken fillets either indoors or outdoors, whichever you prefer.

Step 3:

Assemble the sandwich with 1 grilled cheese assembly from step 1, 2 chicken fillets, 1 tablespoon of sweet BBQ sauce, then finally the remaining grilled cheese sandwich from step 1.

Step 4:

Place complete sandwich into a sandwich press until crisp and toasted. Slice diagonally for easier consumption.

(I personally use a foreman grill in place of a sandwich press.)

Cooks Variation: Optionally, substitute 1 tablespoon olive oil and 1 tablespoon melted butter and omit 1/2 stick butter.
