QUICK CASSEROLE OF LEFTOVERS 
1 c. cooked regular rice
2 tbsp. butter
1 tbsp. minced onion
1 c. milk
1 1/2 c. grated Cheddar cheese
2 tsp. salt
1/8 tsp. pepper
Dash of Worcestershire sauce
1 1/2 c. leftover meat or chicken
1 c. cooked and drained peas, green beans or mixed vegetables
1 (4 oz.) can sliced mushrooms and liquid
1 c. crushed potato chips or bread crumbs

Place butter, onion, milk, salt, pepper, Worcestershire sauce, 1 cup grated cheese and liquid from vegetables and mushrooms into pan. Cook over low heat, stirring until cheese is melted. Put a layer of rice in buttered electric fry pan. Add a layer of meat or chicken, then vegetables and mushrooms. Repeat, ending with rice. Pour cheese mixture over all. Top with chips or crumbs and remaining cheese. Open vent. Bake at simmer until hot and bubbly, about 30 minutes. Serves 6.
