CRABMEAT AND MUSHROOM BISQUE 
3/4 c. butter
1 c. chopped green onions
1 c. chopped green bell pepper
2 c. sliced fresh mushrooms
4 tbsp. flour
2 c. milk
2 c. half and half
1/4 tsp. fresh ground pepper
1/4 tsp. ground mace
1 tbsp. Accent
Dash Tabasco
2-3 c. lump crabmeat
1/2 c. dry sherry
4 tbsp. chopped parsley

In a large kettle, heat butter; add onions, peppers and mushrooms, saute until soft. Stir in flour. Gradually add milk and half and half, stirring constantly until thickened and smooth. Stir in salt, pepper, Accent, mace and Tabasco. Add crabmeat, simmer, uncovered 5 minutes. Just before servings, stir in sherry and chopped parsley. Yield: 8 servings.
