GRATED FRESH APPLE SNOW 
2 c. grated raw apples
3 tbsp. lemon juice
2 tbsp. sugar or artificial sweetener equivalent
1/8 tsp. salt
1/2 tsp. vanilla
2 egg whites
1/4 c. sugar (do not substitute here)

Combine apples, lemon juice and sugar (2 tablespoons), salt and vanilla. Chill. Beat egg whites until they stand in soft peaks. Gradually beat in 1/4 cup sugar. Continue beating until stiff. Fold in grated apple mixture. Very pretty in glass sherbet glasses.

Yield: 6 servings
