NORTH CAROLINA APPLE MUFFINS 
1/2 tsp. cinnamon
2 tbsp. brown sugar

BATTER:

2 c. flour
1 tbsp. baking powder
1 tsp. salt
1 med.-size cooking apple
1 egg
3/4 c. milk
3 tbsp. vegetable oil
1 1/2 tsp. cinnamon

1. Measure and mix brown sugar with cinnamon. Put aside while preparing batter.

2. Preheat oven to 400 degrees.

3. Measure and mix flour, sugar, baking powder, salt and cinnamon.

4. Break egg into bowl. Measure and add milk and vegetable oil. Beat with egg beater.

5. Wash and grate unpeeled apple and add to batter.

6. Add liquid to dry ingredients, stirring enough to moisten. Do not beat.

7. Grease muffin pans. Fill 2/3 full with batter.

8. Sprinkle topping over each muffin. Bake for 30 to 35 minutes. Makes 12 muffins.
