GOOD "OLE" NORTH CAROLINA
CORNBREAD
 
2 eggs, well beaten
1 c. buttermilk
1/2 c. milk
1 c. white cornmeal
1 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
About 1/2 c. water
butter for frying

Combine all ingredients in order listed, adding just enough water to get batter that is like pancake batter, pourable but not too thin.

Melt a generous amount of butter on a griddle or in a large skillet over medium heat. Pour batter to make small cakes (not too small). Fry, turn and fry the other side. Continue until all batter is used.
