CAJUN GUMBO 
1 (6 oz.) pkg. crab meat
1/2 c. flour
1/2 c. vegetable oil
2 lg. onions, chopped
1 green pepper, chopped
6 cloves garlic, minced
2 tbsp. Cajun seasoning
2 c. okra, sliced
1 bay leaf
1 lb. fresh shrimp, shell, deveined and cleaned
3 c. hot, cooked rice

In a Dutch oven, blend flour and oil until smooth. Cook over medium heat 10 to 15 minutes until flour becomes golden brown and smooth. Add onions, green pepper and garlic. Cook for 15 minutes until vegetables are tender. Stir in 6 cups hot water. Add Cajun seasoning, okra and bay leaf. Bring to a boil, reduce heat, cover and simmer for 1 hour. Add crab meat and shrimp. Simmer until shrimp turns pink. Serve over hot cooked rice. Serves 6.
