CARROT CAKE 
1/4 tsp. cinnamon
2 c. flour
2 c. sugar
2 tsp. baking soda
Pinch of salt
4 eggs
1 c. chopped nuts
1 c. cooking oil
3 c. grated carrots
1 tsp. lemon juice

Blend the first 5 ingredients together. Mix remaining ingredients together and add to the flour mixture. Blend. Bake at 325 degrees for 45 minutes.

FROSTING:

8 oz. cream cheese
1/4 c. butter
2 c. confectioners' sugar
1 tsp. vanilla

Mix together and frost cake. Sprinkle nuts on top, if desired.
