CARROT CASSEROLE 
2 bunches carrots
12 saltine crackers
1/2 onion, cut thin
Salt
Pinch of garlic powder
1 cube butter
1 1/2 c. Cheddar cheese

Cook and mash carrots, mash crackers and add with butter, salt and garlic powder. Mix in shredded cheese. (Reserve some cheese for topping.) Bake at 350 degrees approximately 20 minutes.
