MANDARIN SALAD 
1/4 c. sliced almonds
1 tbsp. plus 1 tsp. sugar
1/4 head lettuce, torn into bite-size pieces
1/4 bunch Romaine, torn into bite-size pieces
2 med. stalks celery, chopped
2 green onions, thinly sliced
1 (11 oz.) can mandarin oranges, drained
Sweet-Sour dressing (recipe in book)

Cook almonds and sugar over low heat, stirring constantly, until sugar melts and almonds are coated. Cool and break apart.

place lettuce, Romaine, celery, and onions in a bowl. Toss. Add Sweet-Sour Dressing and orange segments. Toss until all ingredients are coated. Add almonds before serving.
