TURKEY TETRAZZINI | |
3/4 lb. sliced mushrooms 1 sm. green pepper, slivered 2 tsp. salt 2 1/2 c. light cream 4 oz. fine spaghetti, cooked Grated Parmesan cheese 1/4 c. butter 3 tbsp. flour 1/4 tsp. pepper 4 c. diced turkey 2 egg yolks, beaten 1 sm. pkg. frozen carrots and peas, thawed Preheat oven to 300 degrees. Cook mushrooms and peppers in butter 5 minutes. Blend in flour and seasonings. Add cream and cook, stirring until thickened. Add turkey and vegetables and heat. Put spaghetti into greased shallow baking dish. Add small amount of turkey mixture to egg yolks, then return stirring to the turkey mixture. Bake in slow 300 degree oven 45 minutes. Put under broiler to brown lightly. |
