POTATO SALAD 
6-8 sm.-med. potatoes (Irish)
Small onion
1 sm. jar pimentos
Light salad dressing or mayonnaise
1 tsp. mustard
1/2 tsp. salt
1-2 boiled eggs

Boil potatoes with skins or until tender. Remove from heat; drain. Cool to room temperature. Boil eggs (heat to boiling point). Turn off. Let finish cooking in hot water for 20 minutes. Peel and cut potatoes into squares. Peel eggs and run through a wire sieve into potatoes. Add small chopped onion, salt, pimento, mustard and salad dressing to taste. Store immediately in refrigerator.
