PRUNE MUFFINS 
1 c. concentrated apple juice
1 egg white
1 tsp. cinnamon
1 c. pitted prunes
1 c. grated zucchini
1 c. oatmeal
3/4 c. oat bran
1/4 c. whole wheat flour

In blender, combine first 4 ingredients. In a bowl, combine rest of ingredients with blender mixture. Pour into non-stick muffin pans (use non-stick spray) and bake at 350 degrees for 30 minutes. Makes 12 muffins.
