ZUCCHINI DROPS 
2 cups grated zucchini
2 cups sugar
1 tsp. baking soda
1 tsp. vanilla (optional)
1 tsp. vegetable oil
2 eggs
4 cups flour
2 tsp. cinnamon
1 tsp. salt
2 cups nuts
2 cups raisins or Craisins (optional)

Combine zucchini, sugar, baking soda, vanilla and oil. Beat in eggs and add flour, cinnamon, salt, nuts and raisins.

Drop by teaspoonfuls onto greased cookie sheet or silicone baking sheet.

Bake in a preheated 375°F oven for 15-20 minutes.
