YAKITORI CHICKEN | |
2 tbsp. sesame seed, toast 3 minutes in skillet on medium heat 3 lg. chicken breasts, skinned, split and boned MARINADE: 1/3 c. dry sherry 3 tbsp. Oriental sesame oil, or peanut oil 1 1/2 tsp. minced fresh ginger, or powdered 3 tbsp. soy sauce Cut chicken into 6-7 chunks from each breast half. Pour 1/4 cup of marinade over chicken and mix. Cover and chill 1-8 hours. Barbecue - thread onto skewers. Discard used marinade. Barbecue on hot coals 10-12 minutes, cut to test. Moisten with reserved marinade and sprinkle with sesame seed. Also, can dip mushrooms or other vegetables and grill briefly with chicken, about 5 minutes. Stir fry marinade chicken with all of marinade. Lift chicken out and stir fry in hot work or skillet, until done (white). Reserve marinade. Mix reserved marinade with 1 tablespoon cornstarch. Add to chicken. Cook sauce until thickened. Add toasted sesame seeds. |
