ZUCADO DELIGHT 
4 c. sliced zucchini
2 tbsp. butter
1 1/2 c. Swiss or Monterey Jack cheese, shredded
2 c. avocado, cubed

Lightly saute sliced zucchini in butter until slightly brown. Add shredded cheese and avocado and stir. Serve immediately as a side dish.
