ITALIAN DELIGHT 
1 1/2 lbs. ground beef or turkey
2 unpeeled zucchini, sliced
2 onions, sliced
1 green pepper, chopped
1 lb. fresh mushrooms
1 c. brown Minute rice
1 sm. jar Ragu spaghetti sauce
1 envelope Italian salad mix (dry)
1 1/2 c. Cheddar cheese, shredded
1 1/2 c. Monterey Jack cheese, shredded
Salt & pepper

Brown and drain ground meat. Cook squash, onion and pepper until almost tender. Drain. Combine with meat. Add sliced mushrooms, rice, spaghetti sauce, dressing mix and Cheddar cheese. Pour into greased 9 x 13 inch pan. Sprinkle Jack cheese on top. Bake at 350 degrees for 30 minutes.
