POTATO STUFFING 
2 c. hot mashed potatoes
1 egg, beaten
1 qt. cubed dry bread
1 tbsp. minced parsley
2 tbsp. fat, melted
1 onion, minced
1 tsp. salt
1/2 tsp. poultry seasoning
1/2 c. diced celery
Dash pepper

Combine potatoes and egg. Soak bread in cold water and squeeze dry. Add potato mixture. Stir in remaining ingredients and mix well. Use for stuffing different meats. Makes 4 cups.
