FESTIVE FANCY CASSEROLE | |
1 c. cut up fresh cauliflower 1 c. cut fresh carrots 1/2 c. onion, diced 1 c. cut up fresh broccoli 1/2 c. celery, diced (Can use any fresh vegetable - do not use corn) Place in 3-quart large saucepan. Put just enough water to simmer. 3 c. hot water 1 tbsp. salt 1 cube butter Bring to a boil, add 3 cups instant rice. Remove from heat and cover. Wait 2 minutes. Then add: 2 cans chunk tuna (drain oil off) 2 cans cream of chicken soup (do not dilute) 1 can cheddar cheese soup (do not dilute) 1 can Chinese noodles (Chow Mein) 1 sm. container sour cream Stir until blended. Place in large casserole (4 quart); cover with bread crumbs. Put aluminum foil over it. Place in oven at 300 degrees for 30 minutes. If you like it spicy, add a little stone-ground black pepper. Remember, a little goes a long way. Serves a large group, 10-12. |
