ARTICHOKE BALLS 
2 cans artichoke hearts
1 lg. clove garlic, minced
1/2 c. Parmesan cheese
1/2 c. Italian bread crumbs
2-4 tbsp. olive oil
Salt & pepper

Drain artichoke hearts and mince finely. Combine with remaining ingredients until mixture can be molded into small balls. Bake in 350 degree oven for 15 minutes. Yield: about 4 dozen.

To Freeze: Arrange artichoke balls on a cookie sheet, freeze and then transfer to freezer bags. To serve, place frozen balls on cookie sheet and baked in 350 degree oven for 15 minutes or until golden brown.
