1-2-3 CHEESECAKE 
1 c. boiling water
1 pkg. unflavored gelatin
1/4 c. sugar
2 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1 9-inch graham cracker crust

Boil water and in large mixing bowl combine gelatin and sugar. Add water and stir until completely dissolved. Add cream cheese and mix with beaters until all chunks are gone and mixture is foamy (this will be runny). Add vanilla and blend. Pour into pie shell and chill at least 4 hours. Top with your favorite pie filling.
