PORK CHOP AND SCALLOPED POTATOES 
Pork chops
2 tbsp. oil
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
Pepper
1 c. milk
1 c. chicken broth
4 med. potatoes, pared and sliced thin
Parsley

Brown pork chops in oil. Remove from heat. Melt butter in saucepan. Stir in flour, salt and pepper. Cook 1 minute. Add milk and broth slowly. Cook stirring constantly until sauce thickens.

Butter a 11 x 7 x 2 baking dish and arrange potatoes. Pour sauce over potatoes. Place pork chops on top and cover with foil. Bake at 350 degrees for 1 hour. Makes 4 servings.

This recipe is VERY good. Great flavor and all three kids loved it...and I have picky eaters. Definitely will become one of my regular recipes.
